Mc Cambridge’s of Galway is currently recruiting for a HEAD CHEF for our busy day time restaurant.

Objective of the Role

As Head Chef, you will be responsible for the day to day operations in all areas of our kitchens.  Strong communication skills combined with strong organisational ability are essential to the performance of this position. This role is five days per week over seven days, primarily day time hours.

The ideal candidate:

~  Self-motivated and sets a positive example for employees

~  Flair, creativity and genuine love of food

~  Strong understanding of food and food trends

~  Demonstrates high levels of energy, enthusiasm and professionalism

~  At least 3 years in a Sous Chef role

~  Excellent standards

~  Excellent knowledge and understanding of HACCP

~  Excellent leadership, delegation and people skills

~ Menu planning

~  Ability to meet deadlines

~  Ability to work to achieve high standard in very fast paced environment

~  Excellent communication skills

~  Good working relationship and communication with front of house, managers and staff

The key responsibilities relating to the position are as follows:

~  Overall responsibility and full accountability for the day to day management of the Kitchen striving at all times to ensure the maximum efficiency of the operation.

~  Direct the day-to-day work performed in all areas including quality, standards, cleanliness,

~  To attend company management meetings as may be required

~  To ensure all meals are served in a timely manner

~  To ensure all dishes are consistent and to the highest standard

~  To create seasonal dishes/menus

~  To adhere to the strict HACCP policies in place

~  To ensure kitchens run efficiently at all times

~  To work alongside the general manager and restaurant manager on a daily basis

~ To provide staff training

~  To roster within budgets

~ To co-ordinate with purchasing manager to ensure competitive pricing
